Ingredients

  • Nandi Chana Sattu (2 heaped tbsp, lagbhag 30g)
  • Thanda paani (1 glass, 250ml)
  • Neebu ka ras (1/2 neebu)
  • Kala namak (1/4 tsp ya swad anusar)
  • Bhuna jeera powder (1/4 tsp)
  • Hari mirch (1 chhoti, optional, finely chopped)
  • Pudina ke patte (4-5, optional)

Steps (Detailed)

  1. Glass mein Sattu daalein: Ek bade glass mein 2 heaped tablespoon Nandi Chana Sattu daalein.
  2. Thoda paani daalein pehle: Pehle 2-3 tbsp paani daalein aur chamach se ache se ghol lein. Lumps nahi rehne chahiye. Yeh step important hai.
  3. Baki paani daalein: Ab pura thanda paani daalein aur mix karein.
  4. Masala daalein: Kala namak, bhuna jeera powder aur neebu ka ras daalein. Ache se hilayein.
  5. Garnish: Hari mirch (agar chahein) aur pudina ke patte daalein.
  6. Serve karein: Turant pee lein. Sattu neeche baith jaata hai, toh peete waqt baar baar hilayein.

Meetha Version: Namkeen ki jagah meetha chahiye toh kala namak aur jeera mat daalein. Uski jagah 1 tbsp cheeni ya gur daalein. Neebu rakh sakte hain. Dono version equally refreshing hain!

Sattu Paratha

Ingredients

  • Nandi Choker Sahit Atta (2 cups, dough ke liye)
  • Nandi Chana Sattu (1 cup, stuffing ke liye)
  • Pyaaz, finely chopped (1 medium)
  • Hari mirch, chopped (2)
  • Hara dhaniya, chopped (2 tbsp)
  • Neebu ka ras (1 tbsp)
  • Sarson ka tel (2 tbsp)
  • Nandi Pink Salt (swad anusar)
  • Ajwain (1/2 tsp)
  • Ghee for cooking

Steps

  1. Dough: Nandi Atta mein paani daalke soft dough banayein. 15 min rest karein.
  2. Stuffing: Nandi Sattu mein pyaaz, hari mirch, dhaniya, neebu ras, sarson ka tel, namak aur ajwain mix karein. Paani bilkul mat daalein.
  3. Dough ka ball lekar belan se thoda belein. Beech mein 2 tbsp sattu stuffing rakhein.
  4. Kinare uthake band karein. Halke haathon se phir se belein. Zyada daba mat daaliye, nahi toh phatt jayega.
  5. Garam tawa pe ghee lagake dono taraf se golden brown hone tak pakayein.
  6. Hari chutney, achaar ya dahi ke saath garam serve karein.

Sattu Litti

Ingredients (Litti)

  • Nandi Choker Sahit Atta (2 cups)
  • Nandi Chana Sattu (1 cup)
  • Ajwain (1 tsp)
  • Ghee (1 tbsp, dough mein)
  • Paani (dough ke liye)

Stuffing Masala

  • Pyaaz, finely chopped (1 small)
  • Hari mirch (2, chopped)
  • Neebu ka ras (1 tbsp)
  • Sarson ka tel (2 tbsp)
  • Nandi Pink Salt (swad anusar)
  • Hara dhaniya (2 tbsp)

Steps

  1. Dough: Nandi Atta mein ajwain, ghee aur paani daalke medium tight dough banayein. 20 min rest karein.
  2. Sattu filling: Sattu mein pyaaz, hari mirch, dhaniya, sarson ka tel, neebu ras aur namak mix karein.
  3. Dough ke bade balls banayein. Haath se katori shape dein, sattu filling bharein aur band karein. Gol shape dein.
  4. Oven mein 200°C pe 25-30 min bake karein (ya gas tandoor pe). Dono taraf se rotate karein.
  5. Ya phir direct gas flame pe jaal ke bhi bana sakte hain (traditional method). Slow flame pe har taraf se sekein.
  6. Garam litti ko ghee mein duboyein. Chokha (baingan ya aloo mash) ke saath serve karein.

UP Style: Purvanchal mein Litti ko gobar ke kande pe bhi sekte hain. Woh smoky flavour kisi aur tarike se nahi aata. Lekin oven mein bhi bahut acchi banti hai!

Sattu Ka Doodh (Protein Shake)

⏱ 5 min Serves 1 Post-Workout

Ingredients

  • Nandi Chana Sattu (2 tbsp)
  • Thanda doodh (1 glass)
  • Shahad ya cheeni (1 tsp)
  • Elaichi powder (a pinch)
  • Kela (1, optional, zyada thickness ke liye)

Steps

  1. Glass mein thanda doodh lein.
  2. Nandi Sattu daalein. Pehle thoda doodh mein ghol lein, phir baki daalein.
  3. Shahad ya cheeni aur elaichi daalein.
  4. Ache se mix karein (blender mein daalenge toh aur smooth banega). Kela daalein toh thick shake ban jayega.
  5. Turant pee lein. Subah workout ke baad ya nashte mein perfect hai.

Gym Walon Ke Liye: Yeh desi protein shake hai. 2 tbsp Sattu mein lagbhag 6g protein hota hai. Doodh ke saath 14g+ protein milta hai ek glass mein. Imported protein powder ki zaroorat nahi!
