Kadhi Pakora
Comforting kadhi pakora recipe using Nandi Besan. Tangy yogurt-besan curry with crispy besan pakoras. A North Indian household staple that tastes even better the next day. Perfect with steamed rice.
Ingredients
- Nandi Besan (1 cup for kadhi, 1/2 cup for pakoras)
- Curd (2 cups)
- Nandi Turmeric Powder (1/2 tsp)
- Nandi Red Chilli Powder (1/4 tsp)
- Fenugreek seeds (1/4 tsp)
- Curry leaves (8-10)
- Nandi Rock Salt to taste
Steps
- Mix besan and curd for the kadhi base.
- Make small pakoras with remaining besan and deep fry.
- Cook the kadhi with tempering of fenugreek, curry leaves and spices.
- Add pakoras to the kadhi and simmer for 10 minutes.
Kitchen Tips
Keep stirring the kadhi to prevent lumps. Add a pinch of sugar to balance the tanginess. Pakoras absorb curry better if added 10 minutes before serving.
