Missi Roti
Traditional missi roti using Nandi Atta and Nandi Besan. A Rajasthani-Punjabi specialty combining whole wheat and gram flour for extra protein and a distinctive nutty flavour. Topped with butter, it is comfort food at its finest.
Ingredients
- Nandi Atta (1 cup)
- Nandi Besan (1 cup)
- Onion, finely chopped (1)
- Green chilli (2, chopped)
- Fresh coriander (handful)
- Nandi Rock Salt and spices to taste
Steps
- Mix atta and besan. Add all spices, onion, chillies, coriander, oil.
- Knead into firm dough using water. Rest 10 minutes.
- Roll thick (thicker than roti) and cook on tawa with ghee.
- Cook on slow flame till golden spots appear on both sides.
Kitchen Tips
Don't roll too thin as besan makes it fragile. Cook on slow flame for even cooking. Serve with white butter and pickle.
