Puri with Aloo Sabji
Golden puffed puris with spiced aloo sabji using Nandi Choker Sahit Atta. The whole wheat flour makes these puris healthier while still achieving that perfect puff. Paired with a quick, comforting potato curry.
Ingredients
- Nandi Choker Sahit Atta (2 cups)
- Nandi Rock Salt to taste
- Oil for frying
- Potatoes (4, boiled and cubed)
- Nandi Turmeric Powder (1/2 tsp)
- Nandi Red Chilli Powder (1/2 tsp)
- Cumin seeds (1 tsp)
- Fresh coriander leaves
Steps
- Knead a stiff dough with atta, Nandi Rock Salt and water.
- Roll small puris and deep fry till puffed and golden.
- For sabji: temper cumin in oil, add potato, Nandi Turmeric, Nandi Red Chilli, and salt.
- Cook 5 minutes, garnish with coriander and serve with puris.
Kitchen Tips
Roll puris evenly for perfect puffing. Oil should be hot but not smoking. Press gently with a slotted spoon while frying.
