Traditional Thekua recipe for Chhath Puja using Nandi Choker Sahit Atta. These jaggery-sweetened wheat biscuits are an essential Chhath Prasad. Deep-fried in ghee till golden, with fennel and cardamom aroma.

  1. Dissolve jaggery in 3 tbsp warm water. Strain to remove impurities.
  2. Mix Nandi Atta with ghee, fennel seeds, cardamom, and coconut. Add jaggery syrup gradually. Knead into a firm dough. No water unless needed.
  3. Shape into small discs or use a thekua mould for traditional patterns.
  4. Deep fry in ghee on medium-low heat till dark golden brown and crispy.

Kitchen Tips

Strain jaggery syrup well. Dough should be firm, not sticky. Fry on medium-low for even cooking. Let cool completely before offering as prasad.
