Sooji Halwa
Rich and aromatic sooji halwa recipe using Nandi Sooji. Made from Sharbati wheat semolina, this dessert has extra soft granules with incredible freshness. Slow-roasted in ghee with cardamom and saffron for a melt-in-your-mouth halwa.
Ingredients
- Nandi Sooji (1 cup)
- Ghee (1/4 cup)
- Sugar (3/4 cup)
- Water (2.5 cups)
- Cardamom powder (1/4 tsp)
- Almonds and cashews (for garnish)
- Saffron strands (optional)
Steps
- Heat ghee in a pan.
- Roast sooji on medium flame till golden and fragrant.
- Add water carefully (it will splutter), stir continuously.
- Add sugar and cardamom. Stir till thick.
- Garnish with nuts and serve warm.
Kitchen Tips
Roast sooji on low-medium flame for even golden colour. Add saffron soaked in warm milk for a richer flavour. Serve warm for best taste.
