2. Sooji Sheera (Sweet Halwa)

The breakfast dessert that doubles as comfort food. Roast 1 cup Nandi Sooji in 3 tbsp ghee till golden and aromatic. Carefully add 2 cups warm water (it will splutter). Add 3/4 cup sugar, cardamom, and saffron. Stir till thick. Top with cashews and raisins fried in ghee. Total time: 15 minutes.

3. Instant Rava Dosa

No fermentation, no waiting. Mix 1/2 cup Nandi Sooji, 1/4 cup Nandi Maida, 1/4 cup rice flour, cumin, salt, pepper with water into a very thin batter. Pour on a hot tawa from the edges inward. 4. Sooji Uttapam

Thicker than a dosa, easier to flip. Mix 1 cup Nandi Sooji with 1/2 cup curd and water to make a thick batter. Add salt, chopped onion, tomato, green chilli. Let it rest 5 minutes while the sooji absorbs water. Pour thick circles on a tawa, cook with oil on both sides till golden. Total time: 12 minutes.

5. Sooji Toast (Rava Toast)

A South Indian cafe favourite. Make a thick sooji batter with curd, water, salt, chopped vegetables. Spread on bread slices. Shallow fry on a tawa till both sides are golden and crispy. The sooji coating gives a beautiful crunch that regular bread toast can never match. Total time: 10 minutes.

6. Instant Sooji Idli
